Fine food and fine wine has been central to Paul’s philosophy which has spanned an impressive 30 years! Ever since his time at his eponymous Longridge restaurant, locally sourced food has been paramount to the quality and success of his food. Paul has since brought this philosophy to Heathcotes Brasserie, and it is fair to say that his influence is seen throughout the world – we need not mention Goosnargh birds, the idea conceived between Paul and the late and great Reg Johnson.

Such a belief in local food sent shockwaves through the culinary establishment as Paul famously went against the grain at an event in Champagne, choosing to serve his take on black pudding instead of caviar and truffles. This reception confirmed his testament to local food and he has been onwards and upwards ever since!
